A Healthy Ode To: Carla Cafe Garlic Aoli Chicken Sandwich

Quarantine has created stars of the most unexpected hustlers in Los Angeles and we’re so happy to have discovered Carla Cafe and watched the business grow in the process. 

These incredible sandwiches brought carbs back into our lives in January, a month where we try to “detox.” Honestly, following 2020 our only mantra is living, so screw it! An easy Instagram DM order which quickly sells out with pickup at the trendy Bootsy Bellows on Sunset Blvd on Tuesdays, Thursdays and Saturday’s 11:30 AM – 2:30 PM. 

Best known for their hero garlic aoli chicken sandwich, definitely worth the hype and the order when you’re in LA, they are constantly introducing new must-eats (the tuna chop and turkey bliss are winners). 

Per usual, we came up with our very own Carla Cafe inspired low-carb garlic aoli chicken sandwich so you can dig in at home, guilt free, when you miss your chance to make the order cut in LA.  These are an open face, cauliflower thin version of one of our favorite lunches of 2021 so far but can be re-created with bread of choice (keto, GF, sourdough, etc)! 

Ingredients:

  • Cauliflower sandwich thins (we love Outer Aisle or Trader Joes). You can also use any bread for this (CC uses Focaccia)
  • Heaping spoon of Primal Kitchen Garlic Aoli Mayonnaise
  • 1 tbsp shaved Parmesan Cheese
  • 1 chicken breast, grilled + sliced
  • ½ sliced avocado
  • 2-4 tomato slices
  • Handful arugula
  • Squirt lemon+ olive oil

Directions:

  • Toast your bread if need be (we toast the thins!)
  • Spread the mayo on each side of the toasts
  • Toss some shaved parmesan over the mayo
  • Line each open face sandwich (or one side of the sandwich) with sliced avocado
  • Top that with the sliced chicken breast
  • Add the sliced tomato over the chicken breast
  • Coat the arugula with some lemon and olive oil and place over the chicken
  • Either close the sandwich with the other piece of bread, (make sure you add some mayo + parmesan to that slice too) or keep it as an open sandwich
