If you follow Hilary Rhoda (@hilaryrhoda) on IG, I know you’ve asked yourself a million times how she makes the most delicious looking avocado toasts in the world. If you don’t, you’ve saved yourself from salivating at them and now have the recipe in your hands! We put it to the test and not only does it look insane but its also the most delicious. Its definitely the Supermodel of Avo toasts, ironically made by one herself.

Below, the step-by-step instructions straight from the source!


  • Sliced bread – I love multigrain sourdough (do not use soft sandwich bread for this, you’ll need a sturdy one)
  • Olive Oil
  • 1 Egg
  • 1/2 an Avocado
  • Sea Salt and freshly ground pepper
  • Crushed red pepper flakes
  • Feta Cheese
  • Lemon Wedge


  • Toast slice of bread. I like to put the avocado half in the toaster oven at the same time to warm it up a bit so the whole sandwich is warm when you eat it.
  • Heat some olive oil in a pan, crack egg into the pan and season it with salt & pepper (do NOT forget this step!). Let it fry until it gets crispy at the bottom and with the yolk still a bit runny, flip it over and cook for about 30 seconds until it sets. Remove form heat.
  • Mash the avocado on a plate and spread on toast.
  • Season with salt & pepper (don’t forget this step either – seasoning is important!)
  • Sprinkle some red pepper flakes on it (even if you cant handle spicy food, just do it… its not bad and makes it taste delicious!).
  • Sprinkle some feta cheese over it
  • Squeeze lemon wedge on top of everything (another CRUCIAL step).
  • If you are not adding a fried egg, drizzle olive oil on top at this step. If using egg, no need to add oil.
  • Place your fried egg on top and slice down the middle. Voilá!

**The optional steps I have been doing lately are adding a spread of cream cheese before putting the avocado on my toast and then adding some nutritional yeast after the red pepper flakes step. Very delicious with or without. Enjoy!
